📝 10 Ingredient Couscous Salad! We are soaking 📝 10 Ingredient Couscous Salad! We are soaking up the last bit of summer around here, and to me that means grilling! One of my favorite things to serve with grilled chicken or beef is a cold salad, and this 10 Ingredient Couscous Salad doesn’t disappoint! This chopper from Amazon (find in my storefront) make this recipe EVEN easier! - 8 oz Israeli Couscous - Red Onion - Cucumber - Grape Tomatoes - Chickpeas - Olive Oil - Red Wine Vinegar - Dijon/Spicy Brown Mustard - Dried or Fresh Dill - S&P Cook couscous according to the box instructions, set aside in a large container to cool. Chop all of the vegetables and add to the couscous. In a small mason jar add olive oil, red wine vinegar, mustard, dill, salt and pepper. Replace the lid and shake until we’ll combined! Poor over the top and store to combine. Refrigerate and let rest for at least 1 hour, the longer the better! // Optional: this is great with Feta cheese! I’ve worked out here and there since I gave birth 7 months ago, but I haven’t been ready to fully commit. It’s not about losing weight, although I’m hoping to shed some postpartum pounds. It’s about the self care that I have found during my fitness journey over the last few years. I’ve said it so many times - these runs/jogs/walks are my therapy. Today I decided to do it for all the right reasons, and to enjoy my run on this beautiful portion of the Erie Canal Trail here in Central New York. Today I recommitted to myself, to prioritize my own well-being alongside the ones I love, so I can be the best version of myself possible!
